Salad dressing with mustard and orange

Ingredients
  

Ingredients for the dressing

  • 2 tsp mustard Dijon
  • 1 1/2 tsp honey
  • 2 tbsp fresh orange juice or mandarin juice
  • 2 tsp red balsamic vinegar
  • 2 tsp fresh dill replace by 1/2 tsp dried dill tops
  • pinch of salt
  • pinch of freshly ground pepper
  • 2 tbsp olive oil

Instructions
 

Making the dressing

  • Squeeze the mandarins or orange and drain the juice through a sieve
  • Mix the citrus juice with the mustard, honey, vinegar and the dill, salt and pepper
  • Mix with a whisk or a fork
  • When homogeneous, add the olive oil and keep whisking vigorously. A rather thick and stable emulsion will form.
